Simple, nourishing lentil soup is so yummy on a cold night.
It makes a lot, so adjust as you need.

Lentil Soup
(Sopa de Lentejas Madrilena)
serves 10 -- so cut in half!
2-3 carrots, chopped
1 medium onion, chopped
1 whole pimento (from a jar), drained and chopped
1 bell pepper, chopped
4 Tbsp olive oil
16 oz tomatoes (canned or fresh), diced
bay leaf
2 c lentils (do not presoak)
6 c water
In a large pot, saute carrots, onion, pimento and bell pepper in olive oil until soft.
Add tomatoes, bay leaf, lentils and water.
Cover and simmer over very low heat for up to 2 hours.

I’m a former hairdresser who left the salon in 2019 to follow a new dream. Today, I co-own Inuacare, a clean skincare brand infused with handpicked Arctic herbs, alongside my wonderful mother-in-law. It’s more than skincare—it’s a love letter to nature, tradition, and care.
In 2022, stress and anxiety caught up with me. By late 2023, I knew I needed to slow down, live more intentionally, and embrace a gentler pace. That shift has helped me rediscover creativity and joy—knitting, crafting earrings, playing with sourdough, and cherishing life’s small, quiet moments.
These days, I work just a few hours on Inuacare, but every moment is filled with passion and gratitude. Life in the Arctic moves at its own rhythm—guided by nature, family, and the simple beauty of everyday life.

It's super juicy, sweet & delicious!
Galia is a type of cantaloupe that's a cross between a cantaloupe & a honeydew. The fruit is light green on the inside, when ripened.
Backyard remediation project update.
3rd batch of snowpeas sowed are producing peas. Cucumbers are still coming out. Cherry tomatoes are nearing end of fruiting. More compost, lawn cuttings, leaf mulch & topsoil added to cardboard sheets. The sheets are breaking down slowly now.

#Cucamelons aka #MouseMelon aka #Pepquinos are easy to grow & do well in PNW areas. Fruits are size of large grapes & they taste like sour cucumbers. Good for pickling. You can eat them raw, like cucumbers. I like dipping them raw into sea salt with some chopped red chili peppers.
It's native range goes from Mexico to Venezuela. Many people grow it in different areas of the world as a food crop.
